Hee! And here, even if you've used three eggs, you've still only got scrambled egg. Just a lot more of it... But you might serve up two or more fried/poached eggs, and boiled eggs would be pluralised too. I wouldn't like to say 'it's a rule' but I sense that if the eggs are still discrete/separate, they can be pluralised (though you'd still take a bite of singular egg), whereas if they've been homogenised, they become a singular (mass of) egg. Would Americans say 'a three-egg omelette'?
